Sauerkraut



This is the recipe I used to make our homemade sauerkraut.

Oh! We only use the white cabbage for sauer kraut. My dad has a huge, old grater and uses a huge stick with a big block on the end of it to "pound" the cabbage. Then, he stores it in a big garbage can (never used for garbage, don't worry!) and lets it sit for a while. We onlys used red cabbage for "blaukraut". My dad shreds then cooks the cabbage, which turns it blue, then adds the vinegar, which turns it back to purple (science experiment!)then he adds brown sugar and chopped, cooked bacon bits. YUMMMY! We have homemade noodles (spaetzel), brown gravy over the noodles, blau kraut, sauer kraut, some kind of pork, and homemade pretzels. Oh MY, it sounds funny but it is GOOOOOOD!
