Sausage Casserole.

Here is my sausage casserole for Katidids.

Ingredients:
1 tbspn olive oil.
1 large onion.
1kg (2 pounds) sausages.
750 mixed frozen vegetables.
2 cups gravy.
1 tin diced tomatoes.
salt, pepper and curry.

Method:

Heat oil and saute onions with spices.

Add sausages. As they start to cook cut up into bite size pieces. Add vegetables, gravy and tomatoes. Bring to the boil and simmer for 20-30 minutes. Serve on a bed of rice.

Thank you! This will be great to try, & looks like it would freeze well. Couldn't I just use the sausage dripping to make the gravy or, is it a brown gravy? Well, either one would be good. Hubby said thanks also, wants to know if we can have it for supper tomorrow.....as if I'm cooking after moving them! Now who is having a brain burp!
