Virtual Christmas cookie Swap.


I cannot wait to see all the yummy recipes.

Here are a couple of good Australian treats that I like to cook at Christmas. They aren't cookies really but Australians don't have a lot of Christmas cookies. We bake slices more.

1. White Christmas. (I also shared this recipe last year but it such a great recipe I have to include it).

Ingredients:
1 1/2 cups mixed dried fruit
1 cup powdered milk
2 cups rice bubble cereal
3/4 cup icing sugar
1 cup dessicated coconut
2 tsp. vanilla
8oz. (250gms) white vegetable shortening

Method:
Melt the shortening. Add vanilla.Place all dry ingredients into a bowl and mix thoroughly.Add melted shortening (not too hot) and mix till well combined.Press into a shallow tin and allow to set in refrigerator.Cut into squares.

Rocky Road.

Christmas just isn't Christmas without Rocky Road.

Ingredients:
1 bag. chocolate chips
1 can sweetened condensed milk
2 T. butter or margarine
2 C. salted peanuts
1 C. maraschino cherries, halved (optional)
1 package colored miniature marshmallows

Method
In heavy saucepan, over low heat melt chocolate chips with condensed milk and butter.
Remove from heat and set aside.
In large bowl combine peanuts, cherries and marshmallows; fold into chocolate mixture.
In a 13 x 9" pan lined with waxed paper, spread mixture evenly. Chill for 2 hours or until firm. Remove from pan, peel off wax paper and cut into squares.

Makes approx. 40 squares

OMGoodnes! That Rocky Road sounds absolutely sinful! I'm going to have to try that one in lieu of fudge this year! Mmm...cherries, chocolate and marshmallow, what could be better? Great recipes, thanks for posting!

We have made the white Christmas here every year for the children's teachers.
