Tasty Tuesday a day late.

Because Tuesdays are pretty busy, it is hard to get a post up. Yesterday was unusually extra busy but because I took all the photos to do this post, I just have to do it a day late. So here is my Tasty Tuesday post on Wednesday.

Pizza Wheels. 

Ingredients:

1 zucchini

1 red capsicum

1 green capsicum

1 440 can crushed pineapple

1 box of scone mix

pizza sauce

shredded ham

grated cheese. 

Directions:

Get a big bowl and put a colander inside. Cut the capsicums into small dice and place in colander. 

Grate the zucchini and add to capsicum. 

Next add the tin of crushed pineapple Mix it all together and put in the fridge while you prepare the dough. 

I mix the dough in my Bosco mixer. 

Once it is mixed nicely together, tip it onto a floured bench and kneed lightly. 

I cut one box of scone mix into 4 parts. I roll them out into a rectangle and place on baking paper.

Before I make up the wheels, I turn the oven onto 210.  

Now for the fun.. First put pizza sauce on dough. 

 Next put the shredded ham in the centre. 

 Place mixed vegetables on top of shredded ham. 

 Next put lots of cheese. I love cheese so I add it more than I probably should. 

 Next roll the dough up in a Swiss roll. 

 Keep rolling till it is a long snake. (This is what Joseph calls it at this stage). 

Cut the pizza snake  wheels into 12-15 and place in muffin trays. 

Place in  preheated oven for 12 minutes. 

This is what they look like when they come out of the oven. On Friday, I made 60 of them and this is what we have left. They are pretty popular.

For those of you with diabetic children, these pizza wheels have a carb ratio of 0.25. 

Weekend Wrap up.

We have had a great start to the holidays here. On Saturday it was my 45th birthday. When my mother was pregnant with me, I was due on the 5th of October. She wanted to call me Therese Angela after St. Therese and the guardian angels. Back then, the feast for St. Therese was on the 3rd of October and the feast of the guardian angels, the 2nd of October. Since then, St. Therese's feast day has been moved to the 1st so now my patron saints feast is on my birthday. 

For my birthday I am getting a new pie maker and bread maker. Daniel asked me during the week what I wanted and I said a pie maker. They come in two and four. The two was cheaper but I asked him to give some money towards the 4 and I  ordered it. I am hoping it will come early this week. It will be great if it come tomorrow. 

I also ordered the bread maker from eBay. This is from Steve and our younger 4 children. When Steve was studying, we made our bread every day. After many years of use, the belt broke and we decided that we had had enough of bread making for a while so never replaced the belt. I don't think we will be making our bread everyday but I will make hot cross buns, yeast buns and pizza dough with it. 

Since it was my birthday, Daniel cooked tea for the family last night. He cooked Apricot chicken and it was delicious. We haven't had Apricot chicken for a long time. I think it will be one to put back onto our regular meals.

Here he is this morning in his new overalls. These were given to us by friends last year and I put them away until they fitted him. I had forgotten them until I cleaned out the storeroom this week and found them. Today it was a bit cooler here so I put them on him and took this video. 

In a couple of weeks, Steve and I will be having a joint 45th birthday party. We went out this afternoon and delivered invitations to friends that live locally. 

This week we will be on holidays. I have lots of sewing planned.

Cooking bandit.

Tom asked to help with tea tonight. I was. making quiche so decided it was a good dish for him to learn. This quiche is so easy, I think he will be able to make it next time without supervision. Here he is with the quiche before they went in the oven.

The Pioneer Women's Comfort Meatballs.

I finally have a copy of the Pioneer Women's Cookbook.

It is great. It is choc full of great recipes and Ree's little anecdotes. It brings a smile to my lips every time I read it.

Tonight I decided to try Ree's comfort Meatballs.

I was attracted to trying it because Ree says they are great for breast feeding mothers.

Well she is right. I loved them and the rest of the family did too. I think I may need to double the recipe next time or else not tell the family that I am making them and keep them all for myself.

I need some new recipes.

I am feeling like we eat the same meals over and over. I need a bit of a change so thought I would ask you all for your favourite main meal recipes.

I need ideas for casseroles that freeze well and snacks as well.

So if you have any recipes that you love to cook and eat let me know in the comment box.

A productive day.

I love this stage of pregnancy although I am starting to feel weary by the late afternoon.

I have just about finished off my dress. Only the buttons to go on which I will sew on after I post here.

I made the Butterscotch Icecream this morning. Here it is all mixed up. I doubled the recipe and it made 1.3 litres.

I also started Amelia's bathers. Her pants are done and I will do her top when I have a chance. Hopefully I will be able to start it tomorrow.
