Christmas Recipes.

Jane at Building the Ark is having a christmas cookie swap. I love baking christmas goodies so have a couple of recipes to share.

My first recipe is White Christmas:

Ingredients:
1 1/2 cups mixed dried fruit
1 cup powdered milk
2 cups rice bubble cereal
3/4 cup icing sugar
1 cup dessicated coconut
2 tsp. vanilla
8oz. (250gms) white vegetable shortening

Method:
Melt the shortening. Add vanilla.Place all dry ingredients into a bowl and mix thoroughly.Add melted shortening (not too hot) and mix till well combined.Press into a shallow tin and allow to set in refrigerator.Cut into squares.

Next is Rum balls. (I haven't made these yet but this is on the list to give to the children's teachers this year).

Ingredients:
9 Vita Brits or Weet Bix crushed
½ cup coconut
1 cup chopped raisins
2 tabsp. Cocoa
1 tin condensed milk
3 tabsp. Bundaberg rum
extra coconut

Method:
Mix together well in a bowl.Cover in the fridge for ½ hour. (That's what we do in Australia.)(Yours could probably sit in the bowl in the snow.)Shape into balls and roll in coconut.
