lol. So Miss Italian, can you tell me the secret to make melt in your mouth gnocchi?

DO NOT overcook the potatoes (steam if possible and use a yellow or gold tater). If you do overcook, they will get too wet and soak up too much flour making them tough and heavy. Think dumpling, which is what they really are. Coarsely grate and don't over-knead.

I personally am not all that fond of gnocchi:)
