Here is the recipe I use for Cheeseburger soup.

500 gms (half a pound) mince meat. (ground beef)

500 gms potatoes diced.

3 carrots.

3 celery sticks.

1 medium size onion.

1 red capsicum.

4 cups chicken broth.

1 carton sour cream.

250 gms grated cheese.

cook the onion until transperent and add the mince meat. When the meat is browned add in the remaining vegetables and broth. Bring to the boil and simmer for a half hour. Just before serving add the cream and cheese.

Hi Terese,
Thanks for the recipe, it sounds easy and hearty. I'm giving it a go next week when I cook for the in-laws. I'm always on the lookout for mince and chicken recipes.

Please pray for a cure for Type One Diabetes
Our sons Tom and Christopher and our daughter Amelia are type one diabetics. We pray everyday for a cure. We do not want one by illicit means though so don't support any organisation that contributes to Embryonic Stem Cell Research.
